To Make Oyster Soup

Stew some slices of bacon + parsley in a
point of water two quarts of oysters washed
and drained stew them half a point of
cream the yolks of two eggs and a quarter
of a pound of butter rolled in flour serve
them [?]

Veal Cutlet

Cut them off the leg beat them with a
rolling pin lay them single in a dish
grate over them nutmeg and strew them
with salt lard some of them with bacon
+ flour over them the yolks of eggs well
beaten so that they are moistened with
the egg then fry them in clarified butter
till they are of a fine color in the mean
