Knock & Strain yor black Berries through a Strainer and put them into a well hooded spigget pot let it stand Pot let it stand. 3 or 4 days then let it run through a jelley Bagg, then swoddle it with Sugar and let it stand four or five days closedstop't, then bottle it & put into evry bottle a lump of Sugar. To Make [Curron ]Wine Take ten Quarts of Watr. Thirty Pound of Ripe Currans the stalkes being pick't of bruised them with your hands put them into the water, and 2 pound of Sugar with them and let them stand one night, put them through a Seive the next Day & then put to the Liquour five pounds more of Sugar and stir it till it be [ molled] then put it into a Barrel & stop it as closed as you can. [ sad ]let it stand seven or eight days, and then bottle it, putting into evry bottle a little Sugar, be sure you let the wine run through a jelley Bagg from the sop into the bottles, & then Corke them well, & tie down the Corks

[Coner] is close in a pot fill [nosct] day, [thon] [vun] it through a piece of [flannoll], [Bt] none of ye sediment gos in, put to any and gallon two pound of Loafs or good pound or [clugar], lot it stand a bowl a [woek] close stop't or coudn'd, if you run it [sliro] sho [flanoll] again it will be clear, put a fine thin [clothsindemea] th lost any [hffle] hair should fall in, put it into strong bottles looking at it of [lons] lost any of ye Corks fly out: if you think it not sweet enough you may put some pieces into [overy] bottle, but two two pount to a Gallon is suffisient unless you keep it v'ery long. To Make Alder barry Wine Gather yoer Alder berrier when they are dry & full ripe pick them and put them into an Earthen Pott so fit in a pan of water hott to stove take a quart of the juice to a gallon of water and two pounds of Sugar boile the water juise & Sugar halfe an hour & skim it very - well when it is [cots] put a Spoonful of yest to it and put it into a Barrell close stop't. keep it a fourtnight or [thpse] weeks or then draw it into bottles put into every bottle a a lump of hard sugar you must keep it a quarter of a [year] bifore you drink it bur if a year it will be better.
