Take as much Carrat grated as the bigness of a penny Loafe and as much grated Bread, halfe a pound of melted Butter Five Eggs a quarter of a pound of Sugar and a little Nutmeggmix all those together with a little good cream, god butter your dish let it stand about an hour in a moderate Oven, and soe serve it up with butter Sugar and Sack A White Pott Take a quart of Cream six Eggs with four whites a little Salt and a Nutmeg cutt in quarters and a little sugar cutt your Manchet like Dice with lumps of Marrow a few Rosolis a little Rose water mix all those together and put them into a Buttered Dish and bake it To make Puff Paste Take a quartern of fine fflower leave out a quarter of it and mixing to the three quarters of it with cold water into a paste, then take a pound of Butter role the the Paste thin and spread your butter all ovir it, soe roll it up all onewayes soe doe seaven or eight times Pancakes Take six Eggs and beat them well with a little flower, then put in a quart of Cream and a pound of melted butter and a Nutmeg Let your Pan Get very hotte soe fry without oil [or] butter or Seame Fritters Take Ale mixt with Sack warm'd ten Eggs halfe whites beat them very well and mix them with fflower soe as for Pancakes put in it a little Ginger pared and cut some Pippins round and thin and dipp them into the blatter and then trow them into the Pan let your seam Boyle when you put them into the Pan and fry them quick To make Puff Paste Take a quartern of the ffinest fflower Seven Eggs four Yolkes tak out break them into the fflower and make them very stiff with cold water then Roll it out pretty thin and take two pounds of ffresh butter and cover it over thick with bitts of butter then drudge it over with fflower double it in three then double it in three your other way and lay your ends downwards and Roll it out soe doe till all the butter be spent For

For Cold Paste To a quart of flower take a pound of Butter six or seven eggs and but two whites rub the butter into the flower but not two stiff if it go for a tasty shrow some beef so wit if it thro a ___rub it with your butter or you may take a pound to a dash ___sure not to work your __too much To make Wiggs Take three pounds of flower a Nutmeg grated a little mace some salt and almost half a pound of caraway comfits mix all those together then rub in a quarter pound of butter in a pint of cream six spoonfuls of each four eggs foaming out the whitesof two of them half to a pint of yeast working those well together let it stand to rise
