Lemmon Dessert
4 eggs pecans
1 cup sugar 2 doz lady fingers
1 large lemon or (2 small ones)
1 envelope gelatine
1 pt whipping cream

Beat 4 egg yolks with 1 cup
granulated sugar
Add juice and grated rind of lemon
Soak one envelope of gelatine in
1/4 cup cold water several minutes
Then dissolve in 3/4 cup warm water
stirring well. Add dissolved gelatin
to above mixture.
Add scant cup pecan meats (broken up)
and fold in 1 pint whipped cream
and 4 egg whites beaten stiff
Line mold with lady fingers and cover
with lemon mixture. Crumble a few
extra lady fingers over top. Add a few whole
pecans. Put in refrigerator for at least six hours.
