Sweet & Sour beans
Get a [breast?] of mutton
suet, put on early with
little pepper & onion -
and put in beans in
time to give them 2 or 3
hrs. cooking - till tender -
same as a plain stew -
(Do not cut beans)
About 1/2 hr. before dinner
put in tables. dark
molasses, pour in little
vinegar and sugar about 5 or 6
cloves. Season to taste.
Take a piece of butter &
a little flour in frying
pan and brown it, then
pour some gravy from
beans on this till it
thickens then pour back in
beans.
