Lobster Salad

To one can of lobsters take
4 eggs. The yolks stirred well
1/4 teaspoon salt and pepper
sugar to taste, 1/2 teaspoon
mustard in 1 1/2 cup vinegar
tablespoon butter, let the whole
come to boil until it thickens
stir constantly. When cold
thin with sour or sweet cream
(about 1/4 cup)

This is simply the sauce.
Lobster is prepared like chicken

Potato Dumplings.

Grate about 6 - 7 cold
boiled potatoes. Add salt
two eggs and flour enough
to stiffen. Roll out and cut
with cookie cutter. Cook [in?]
boiling water 15 min. Brown onion in
plenty of butter, [???]
