Moisten with a little stock
or gravy left from roast.
Put a piece of butter on
top of each and cover with
fine bread crumbs. Set
tomatoes in shallow pan
with little water (to prevent
burning) & bake in oven
till tom. are tender but
not broken- about 30 min.
Serve with a cream sauce

Sicilian Sorbetto

Rub a qt. of ripe peaches
through coarse sieve. Add
a pint of orange juice.
Put 1 lb. gran. sugar in saucepan
with 1 qt. boiling water, stir
till sugar has dissolved
then let boil five min.
