Raisin Pie (with pastry top)

One 8 in. pie
450 F - 30 min

Simmer 10 min:
2 1/2 C. seedless raisins
1 1/4 C. water
Mix 2 T corn starch
1/2 C. sugar
1/4 tsp salt
Add to first Mixture and
cook until clear.
Add 2 T lemon juice
1 T butter
Cool.
