Peach Leather

.... "Whatever the weather, you
will be sure to {?} the tart
little sugared rolls of peach
leather which is really a
North Carolina confection,
sister to the apple leather of
the Shenandoah Valley in
Virginia. Of course, there is a
recipe for it, but it takes
the sunshine of the South
to make it successfully,
for the directions read:

Take one or two pecks of soft
peaches, pound them, pass
the pulp through a coarse
sieve, and to four quarts
of pulp add one quart of
good brown sugar, mix well
together and boil for about
two minutes. Spread the
paste thinly on plates and put
