Cucumber Fritters (Radio Recipe)(Mary Ellis Ames)
(Good to serve with Lamb)
Mix - 1 1/4 C flour
2 t bak powder
1 t salt
1 t sugar
1/8 t pepper
Mix and add to dry ingredients:
2/3 c. grated cucumber (1 large [?])
3 T cucumber juice (?)
1 egg
1 T melted butter
Drop into deep fat for 3 mins. 350F
Makes [?] doz small fritters (8 servings)
Serve with Tomato Sauce
4 T shortening } fry until onion
4 T chopped onion} is tender
Add 4 T flour
1/4 t worchester sauce
2 c tomato juice
1/2 to 1 t salt
1/2 c. cream or [?] milk
Cook all ingred (except cream) about 10 mins
Just before serving put in cream.
For variations, instead of onions - put peppers
mushrooms,tomatoes
