Pineapple Farina Croquettes

Makes 6 or 8
Make a sauce of
2 T shortening (melted)
2 T flour
1/2 C milk
1/2 tsp salt
Pepper to taste
Add
1 C cooked farina
1 C crushed pineapple (drained)
Chill
Form into croquetts - roll
in cracker crumbs. Dip
in egg (diluted with
milk) then in crumbs
again, fry, and drain.
