Recipe for Yeast (Mr Ballend)
Heaping quart bowl of potatoes. Put them in
boiling water, and when they begin to boil, put
into another vessel containing two quarts of cold
water, a large handful of [Hips?], & put them onto
boil_
When the potatoes are done, peel & pound them.
Take heaping quartpint bowl of unsifted flour,
which sift, & houring added a table spoonful & a
half, of salt, and a cup of brown sugar, stir well
together__Add these; to the potato; & stir a
great deal_Strain the hops, & pour the hop water
while boiling hot to the potatoes &, stirring all the
time_
Strain the whole gradually through a soup
strainer, & if too thick, to go through readily,
add a little boiling water_ When luke=warm
add [aback?] a pint of, yeast, & pour in a stone
pot to use_
When risen, pour it into a stone jig, for use.
To make bread
To two quarts of flour, add a piece of butter, the
size of an egg. Moisten with lukewarm water,
