Pineapple Pie
1 can grated pineapple
1 C sugar
2½ TB flour
f.g. [few grains] salt
1 egg, separated
½ TB butter
Prepare pie crust. Brush over with white of egg to prevent sogginess. Strain pineapple. Add sugar, flour, salt and
beaten egg. Pour into pie dish.
Add small pieces of butter.
Cover with strips of pastry. Bake
in oven about 40 min. reducing
heat during second half of baking.
