Place in covered kettle, add water, garlic,
celery, onion, carrot, vinegar + sugar.
Cover + simmer 4hrs, or until a fork
pierces the tongue easily. Now let tongue
stand in water for at least 1 hr. Then
remove, take the skin, and trim thick ends
where small bones are apparent.
Slice diagonally across. Meanwhile,
brown butter in saucepan. Add
flour + salt + blend until brown. Stir
in broth slowly and when mixture
thickens, add rest of ingredients and
stir well.

2¼ c. sifted flour | 4c. canned, pitted, sour red cherries |
1t. salt | |
¾ c. shortening | 1⅓ c. sugar |
Ice water | 3 Tb. cornstarch |
Sift flour + salt together, cut in
shortening until [particles?] are size of navy
beans. Add just enough ice water to
[bind?] [particles?] together, mixing.
