Indian Pudding


1 qt milk ½ c. gran. sugar
¼ c. yellowcorn meal 1 t. salt
½ c. dark molasses 1 Tb. butter
1 t. cinnamon
1 t. nutmeg
Scald milk in double boiler. Add
corn meal slowly while stirring
& cook 20 min. Add remaining
ingredients, turn into greased 1 1/2qt
casserole & bake uncovered in a
slow oven 275 (degrees), 3 hrs. Serve hot
or cold with vanilla ice cream or
cream. Serves 6. This may be re-heated in an oven of 275°.

¾ lb (2/3 c) chopped dried, whole figs 3 eggs, well beaten
1 ½ c. sifted all purpose flour
1 ½ c. milk 2 ¼ t. baking powder
1 1/3 c. suet, chopped fine 1 c. gran. sugar
½ c. soft bread crumbs 1 Tb nutmeg
3 Tb. grated orange rind ¾ t. salt
