Indian Pudding
1 qt milk | ½ c. gran. sugar |
¼ c. yellowcorn meal | 1 t. salt |
½ c. dark molasses | 1 Tb. butter |
1 t. cinnamon | |
1 t. nutmeg |
corn meal slowly while stirring
& cook 20 min. Add remaining
ingredients, turn into greased 1 1/2qt
casserole & bake uncovered in a
slow oven 275 (degrees), 3 hrs. Serve hot
or cold with vanilla ice cream or
cream. Serves 6. This may be re-heated in an oven of 275°.
Fig Pudding Good
¾ lb (2/3 c) chopped dried, whole figs | 3 eggs, well beaten |
1 ½ c. sifted all purpose flour | |
1 ½ c. milk | 2 ¼ t. baking powder |
1 1/3 c. suet, chopped fine | 1 c. gran. sugar |
½ c. soft bread crumbs | 1 Tb nutmeg |
3 Tb. grated orange rind | ¾ t. salt |
