Uncooked Icings
Yummy Chocolate Icing
3 sq. unsweetened choc. melted | 2½ Tb. boiling water |
3 egg yolks | |
1½ cup sifted conf. sugar | 4 Tbs butter |
Melt choc over hot water. Remove.
add sugar and boiling water and stir until
well blended. Add egg yolks, one by one,
while beating with a spoon, then add
butter, 1 Tb at a time, while continuing
to beat. Fills and frosts 2 8" or 9" layers.
Cream Icing (may be tinted)
2 egg whites, unbeaten | about 4 Tb top milk or light cream |
6 C. sifted conf. sugar | |
⅛ t. salt | ½ t. vanilla or almond |
Combine egg whites, 1/2 sugar, salt
and beat. Add rest of sugar alternately with
milk until stiff enough to spread.
Add vanilla - 2- 9" layers.
