Sea Foam Icing: Substitute 1½ c. brown
sugar, firmly packed for gran sugar,
omit corn syrup & add a dash of salt.
While icing is still soft, sprinkle choc.
flakes in 1" border around top. To flake
choc, scrape with sharp knife, holding
it at right angles to choc & scraping down.
Choc Icing: Gently fold, do not beat
3 sq. melted & cooled unsweetened choc
into icing after it has been removed
from stove.
4 Min Snow Icing
1 egg white | ¾ t. white corn syrup |
¾ c. gran sugar | ½ t. vanilla |
3 Tb. water |
Combine 1st 4 ing. in top of double
boiler or bowl & beat until well
mixed. Place over boiling water & beat
constantly with hand beater for 4 min
or until icing peaks. Remove, add vanilla
& beat until spreading consistency. 2-8"
layers. If desired, 2 sq. choc melted with
