2 T. butter may be poured over top of icing
after it has partially set.
Marshmallow Icing Make same as other
marshmallow icing

Fluffy Icing


1⅔ C. gran. sugar ¼ t. cream of tartar
½ C. water ½ C. egg whites

Combine sugar, water and cream of
tartar and stir over low heat until sugar
is dissolved. Cook without stirring to
260°. Cook to 270° if say is cloudy. Beat
egg whites until stiff but not dry at
high speed. Add syrup slowly beating
constantly. By the time all the syrup is
added the icing should be ready to spread.
This icing mounds and remains soft
with no crust

7 Minute Icing


2 egg whites 1 Tb. white corn syrup
1½ C. gran or powdered sugar 5 Tb. water
½ t. vanilla
