in moderate oven 350° for 75 min

Toasted Snow Squares


1 envelope plain gelatin 3 egg whites, unbeaten
4 Tb. cold water
1 C. boiling water ¼ t. salt
⅔ C. gran. sugar 1 t. vanilla
16 graham crackers, rolled fine

Sprinkle gelatin over cold water
and let soak 5 min. Add boiling water
and stir until dissolved. Add sugar and let cool
Stir slightly, then add egg whites, salt
and vanilla. Beat with rotary egg
beater or electric beater at high speed
until mixture is light and resembles
thick cream. Turn into 9x9x2 pan
and chill. In serving, cut in to 1" square
and roll in graham cracker crumbs
Serve with butter sauce. Makes
8-10
Don't make mixture too light or fluffy
