Vegetable Harlequin
1bunch celery | 1 c. milk |
1 bunch pared carrots | 2 Tb. butter |
5 peeled small white onions | speck pepper |
1 t. salt | 1 c. boiling water |
Cut celery into ½" pieces (4 C)
Cut carrots in half lengthwise (3½ C)
Quarter the onions Place all veg in
a covered saucepan with salt and
water and cook for 40 min. Add milk
butter pepper and cook slowly for 15 min
taking care that the milk does not
boil. Serves 6.
Baked Peas and Bacon
6 slices bacon | 2 t minced onion |
4 C. canned pea | |
½ t. salt | ½ C. soft bread crumbs |
⅛ t pepper | |
1½ C. thin white sauce | 2 Tb. melted butter |
