Scones


2 C. sifted cake flour ¼ C. shortening
3 t. baking powder 5 Tb. milk
½ t. salt 2 eggs
2 Tb. gran. sugar
Sift together the flour, baking powder
salt and 2 Tb.sugar. Cut shortening into
this until mixture looks like coarse corn
meal. Add milk. Separate 1 egg, reserve
1 Tb. of the white. Beat rest of this egg into
othe egg. Add to flour mixture. Roll
to ½" on a lightly floured board. Cut
into 3" squares, then cut each square into
2 triangles Arrange on a greased baking
sheet; brush top of each scone with some
of the egg white, slightly beaten, and
sprinkle with remaining sugar. bake
in 450° oven for 10 min. Next day the
scones may be split, brush the cut sides
with melted butter and toast until golden
brown. Makes about 20 split scones.
