Heat the milk scalding hot in
Double Boiler add sugar + salt
to egg + beat moderately. Pour hot
milk slowly onto the egg. Return
to double boiler cook stirring
constantly Until the spoon when
lifted from the micture is coated
Lift upper from lower part of double
boiler occasionaly to avoid too rapid
cooking Add vanilla after custard
is cooked
Creamy egg on Toast
1 egg
⅓ cup milk
Spk salt + pepper
Beat egg Add milk salt + pepper
Place in double boiler + cook until
about 1 tblsp of liquid remains
