Recipe for Yeast
1 medium sized raw potato pare
1 cup of rapidly boiling water 1 tblsp
of sugar 1 tsp salt ¼ cake dry yeast
while the water boils rapidly grate
the potatoes into the water boil
until clean like laundry starch
Stir sugar + salt in while it is
hot cool it down to lukewarm +
then add the yeast cake which has
been soaked in a little warm water
allow to ferment in a stone crock
24 hrs place in a quart mason
jar + set in a cool dry dark place. This
will keep about 2 weeks + the last
cup of this mabe [may be] used in place
of a dry yeast cake in making
a new supply.
