½ lb of meat 1 lb apples ½ lb
raisins ½ lb currants ⅛ lb citron [lemon]
cider to moisten ½ c sugar ½ tblsp
cinnamon ¼ tblsp cloves (grounded)
¼ tblsp mace ½ tblsp allspice ½ tblsp
nutmeg 4 tblsp butter Cook the
meat + hold cold. Put through
meat cutter Pare + core apples
+ put through cutter. Wash currants
+ raisins cut raisins + citron
with knife into small pieces
add water + moisten + cook
until apples are done moisten
with cider put in sterile
airtight jars
