Creamed Sweetbreads
Let the sweetbread stand in
cold water one hour drain and
put into acidulated salt water
which is boiling. Let boil 20 min
then plunge into cold water to
keep white + firm cut the par-
boiled sweet-breads into cubes
and reheat in white sauce
They may be served on toast
in patty cakes or in crustades.
Rules for cooking the Sweet breads
1 C Water 1 tsp vinegar 1 Tsp salt.
½ C White Sauce
Riced Salmon (or Kedgeric)
One egg 2 C boiled rice ½ C salmon
2 tbsp chopped parsley ½ tsp salt Spk
pepper 4 tblsp butter Blend + heat boiling
hot water add the egg raw + well beaten
Serve at once
