Coffee Egg Nog
One egg -------- 1 tsp sugar
few grains -------- salt
⅔ filtered -------- coffee
Beat egg slightly add sugar salt and
coffee gradually while stirring con-
stantly to make it more palatable
Place in hot water and continue stirring
until hot enough to be pleasant to the
taste care must be taken to keep the
temperature below the point at which
the egg coagulate. The egg may be
beaten lightly if a frothy mixture
is desired
Orange Albumin
White of one egg ½ C. orange juice
2 tblsp of crushed ice 1 tblsp sugar Beat
egg slightly add the orange juice and
strain over the crushed ice
