To make Cheesecakes 153
Take three quarts of new milk fit for cheese,
hang it up in a cloth, & let it drop very clean
from t e whey, then beat t e curd half an hour
in a marble mortar, with half a pound of butter,
half a pound of sugar, 3 eggs, a nutmeg grated &
a spoonful of orange flower water, lay one
spoonful of this in each pan, having a good
light puffs past to lay it in, bake them in a quick
oven. a quarter of an hour bakes them.
To make a Devonshire white Pot.
Take a quart of good cream & boyl it, grat in it a
peice of Cinnamon, & when it is boyl'd let it stand
till it is cold, then take 8 Eggs & cast half t e whites away
& beat t e eggs & cream well together & put a little orange
flower water sugar & nutmeg, & make a peice of puffs past
to lay at t e bottom of y r dish, & then slice a french role
& lay it in t e dish, & put a handfull of raisons of t e
sun on top of t e bread, & you may put in some marrow
in it if you please.
