248 To make a jam of Cherries

Wash & weigh morrella Cherries to each pound of them alow three quaters
of a pound of loafe sugger beat to powder take out as many of the stones
as you like then put your Cherries and half your suger into your preserving pan
over a gentle fire lett them stew slowely till tender, then take them of the fire
and pour out some of their Liquor to the quantity of a pint from eight or
ten pound of Cherries put in the remainder of your sugger and half a pint
of the juice of red corrants to every pound of Cherries, this should boyl quiet [serve] it
well when boyld enough take it of and lett it stand covered for a time but not
to long to lett the due fall in truse your corrants through a sive
