seeds & string & pul all together, yn mak yr Jelley of John Apples & Konlish
pippons make it very Strong; yn take 1/2 of ye best double refines sugr
& half a pint of pippin Jelley, Let ye Sugar be finely beat & boyle ym wel
together, yn put ye Jues of yr Orring In, & one Spoonfull of ye Juse of
Lemon, yn take ye waight of all this In double Refined Suger, and
boyle it by it self to a candy height, yn put altogether & keepe ym
stirring continually on ye firetill ye suger be Melted, but not boyle
ym, Let ym Stand of ye fire a while, yn Let ym on againe a Little Still stirring
ym: be careful yt they do not boyle this do 3 times yn put ym Into yor
Glasses, & ye next Morning put ym Into yor Stove; & dry ym wth An
even fire.
