To make Elderberry wine

To every 5 Gallons of water take 20lb of Malligo Raisons &
& shread them very small but first let them be rub'd very cleane the water
must be extreamely well boyled & put upon the Reasons boyling
hott, & then it must stoop 10 dayes stirring them once a day, & keeping it
Closd [covvied] & passe the Liquor through a haird cive, heve in
[rediefse] 6 pints of Elderberrie Juce which must be infusd, as for the
Jelly of Currance the cleare only being taken put it cold to the Liquor
stirring them well together, then [Jim] it & stop it up, Let it stand in a
warme place 6 weeks or 2 monthes then Bottle it

To make Quince Wine

Take [...ounces] Quinces & wipe them dry Cleane them grate them on
a Large grator as [nere] the cores as you can, but len none of
the hard which is about the cores go in to the rest, then straine them into
an Earthen pott, & to a Gallon of Liquor put 2 lb of fine Loafe
suger, stir it till your suger be desolved, then cover it close & stir it
no more, but lett it stand 24 hours & by the time it will be
cleare Enough to bottle. you must [let] it out of your pott with
a [Cheanery] dish or a silvor Ladle for your pot must not be [slird]
for feare of mixing your jelling/

Let your Quince be very Ripe this will keep
but a yeare good/
