Description

Prunus dulcis var. amara (bitter almond) contains the enzyme emulsin which acts on two present glucosides yielding cyanide and the essential oil of bitter almonds (nearly pure benzaldehyde) the source of the bitter flavor. When used medicinally even in small doses, the cyanide effects are severe or lethal, especially in children; the cyanide must be removed before consumption.
