To skin a fish
with a sharp [knife] remove fins along
the back and cut off a narrow strip
of skin along the back, draw the skin

To fillet fish
A piece of fish large or small freed
from the skin and bones is called a fillet
Care of canned Salmon
Open and remove from can at once
place in a sieve and pour warm
water over it this is to remove surplus
fat and other impurities.
Directions for use of Maitre D Hotel Sauce
Maitre D Hotel Sauce or parsley butter
1 tblsp butter 1 tsp Lemon Juice 1 tsp chopped
parsley ⅛ tsp salt cream butter parsley and
salt, add Lemon Juice slowly Glaze on food and
allow heat of food to melt the butter
