Lemon Gelatine


¾ tsp Gelatine 1 tblsp of cold water
2 tblsp Lemon Juice 1½ tblsp sugar
3 tblsp water

Swell the Gelatine in 1 tblsp of cold water
for 15 minutes dissolve the swollen Gelatine
over the hot water combine mixtures strain
into wet molds and chill until firm.

Lemon Sponge
¾ tsp Gelatine 2 tblsp lemon juice 3 tblsp
of water 1½ tblsp sugar 1 tblsp of cold water
1 egg white combine as for Lemon Gelatine
when nearly firm beat and add egg white
beaten stiff.

Creamed Puffs
1 C. water ½ C. butter 1 C. flour 4 eggs. Put
the butter and water in a saucepan and place
over the fire as soon as the boiling point
is reached add flour all at once and stir
