Apple Water
One large sour apple sugar to
taste ½ C. cold water and Lemon Juice
wipe and core apple fill cavity with
sugar. Bake in dish with enough
water to prevent burning when
soft wash and add a little more
water set stand 20 min strain
through a cheese cloth and add
lemon juice to taste
Egg Souffle
½ tblsp flour ½ tblsp butter ⅓ C. of thin
cream yolk of one egg white of one egg ¼ tsp
salt Make a white sauce of flour butter
salt and milk, Add yolk of egg and beat two
minutes, then cut and fold in beaten white
of egg beaten stuff and dry Turn into
a buttered dish set in a pan of hot
water and bake in a slow oven until
firm
