3 eggs Upside-down cake
1 c brown sugar
3 tb butter
5 or 6 slices pineapple
3 eggs (separate)
1 1/2 c sugar
1/2 c pineapple juice
1 1/2 cs flour
1 1/2 t baking powder
1/4 t salt
1/2 t vanilla
Melt butter and brown sugar as
in 2 egg upside cake
Batter
Separate the eggs, beat the yolks
until light yellow, add the sugar
pineapple juice, flour mixed and
sifted with salt and baking
powder, vanilla, last of all the
lightly beaten whites. Put in
a hot oven 450° for 5 minutes,
then reduce the heat to 350°;
bake until done. Serve with
