Rice Pancakes
Boil half a pint of Rice in water till like jelly,
put to it six Eggs, a quarter of a pound of Butter stirred in
while hot, some Sugar, Nutmeg, Salt, and Orange-flower
water: make it into little cakes with some Flour to bind it
and fry them in Lard etc. Eat them with orange and sugar.
Another way to make them is to boil the Rice as
above directed, and put to it one pint of cream, the yolks
of four Eggs, two spoonfuls of Yest, a little Wine, Sugar,
Cinnamon and Salt; when mixed, to be set before the fire
