Jelly Roll (Refrigerator Cake)

Jelly roll	1 tbsp. gelatin
Peach preserves	2 tbsp. cold water
Peach pulp, 1 cup	1 cup whipping cream

Dissolve gelatine in cold water and
add peach pulp. Combine with
whipped cream. Spread jelly roll
with peach preserves. Pour half of
fruit & whipped cream mixture
into deep mold, add jelly roll, then
the remaining fruit & cream.
Chill. Slice & serve with whipped
cream. This jelly roll may be
sliced before being plated in
