Coconut Peaks (Candy)
¾ cup cold mashed potatoes
4 cups confectioner sugar
4 cups shredded coconut
1 ½ tsp. vanilla
⅛ tsp. salt
4 sq. (4 oz) unsweetened chocolate.
Combine mashed potatoes & sugar,
add coconut, vanilla & salt &
blend well. Form in peaks
on slightly greased surface.
Allow to stand uncovered
20 min to dry. Melt chocolate
over hot water & dip base of
each coconut peak in it.
Allow to stand on wax paper
until chocolate is firm.
Makes about 2 ½ pounds.
