Green Tomato Relish.
2 quarts minced green tomato
4 quarts minced cabbage
6 green pepper, minced
6 medium onion, minced
3 tablespoons salt
½ cup brown sugar (half cup)
½ cup mustard seed
3 tablespoons ginger
2 ½ tablespoons whole cloves
1 ¾ tablespoons all-spice berries
2 ½ tablespoons celery seed
2 quarts vinegar
Place chopped vegetables on a platter
& sprinkle with the salt. Let
stand 24 hours & drain well.
Add seasonings, sugar, and
vinegar & simmer for half-hour
Pack in sterilized glass or
earthen jars and seal. Yield
6 quarts. Half the recipe can

1 3/4 tablespoons all-spice berries
2 1/2 tablespoons celery seed
