Homemade Bread

Smells delicious looks delicious is delicious! Treat the family to homemade bread

2 teaspoons salt 2 tablespoons sugar 3 tablespoons shortening 2 cups scalded milk 1½ yeast cakes 6 cups sifted flour (about)

Combine first four ingredients and cool to lukewarm. Blend in crumbled yeast. Add 3 cups of the flour and beat thoroughly. Add remaining flour and knead on a floured board until dough is smooth and elastic. Place in a greased bowl and brush with melted butter. Rise to double in bulk (about 2 hours) in a warm place. Knead down shape into loaves and place in greased bread pans. Rise double again (1 to 2 hours). Bake in a moderately hot oven (375° F.) for 10 minutes. Reduce temperature to moderate (350° F.) and bake 30 to 40 minutes longer. Yield: 2 loaves.

SPOON BREAD

¾ cup yellow cornmeal 1 cup boiling water 1½ tablespoons salt 1 tablespoon brown sugar 1 tablespoon butter 2 cups milk 2 egg yolks slightly beaten 2 egg whites stiffly beaten

Add cornmeal gradually to boiling water and stir until mixture thickens. Add salt sugar and butter. Beat well add milk and beaten egg yolks. Fold in beaten egg whites and bake in a moderately hot oven 425 degrees F. 35 to 40 minutes until golden brown. This bread should be soft in the middle and should be served with a spoon.

Potato Flour Muffins

4 eggs. Pinch of salt. ½ Cup white potato flour. 1 tsp Baking powder. 2 tbsp ice water. 1 tbsp sugar.

Beat egg whites very stiff add salt & sugar to beaten yolks & fold into whites sift flour and baking power twice and beat into egg mixture add ice water last. Bake in moderate oven 15 or 20 minutes

Millies Corn Dodgers

1 Cup cornmeal. 1 tsp fat. Salt. Pinch of sugar. 1 cup boiling water.

Mix dry ingredients & fat. Pour over this 1 cup boiling water separate from spoon & drop in hot fat like croquettes or doughnuts
