New England Corn Cake.

1 cup corn meal (ground
very coarse); 1/2 cup whole
wheat flour; 2 tbsp. sugar;
1/2 tsp. soda; 1/2 tsp. salt; 2 cups
milk; 1 tbsp. fat; 1/4 of a
cake of yeast dissolved in
1/4 cup lukewarm water;
1 egg.

Method: - Scald the milk
and pour over the corn
meal, add fat, melted
and the salt, now when
this is cool add the flour
and the dissolved yeast,
let raise over night. In
the morning add soda
dissolved in warm water
and beat thoroly, add the
egg beaten light and
pour into shallow pans.
Bake 30 mins. in a
moderate oven.
