Rhode Island Johnny Cake.

Pour boiling water over
1 cup finely ground white
corn meal until it forms
a thick paste, add 1 tsp.
fat; 1/4 tsp. salt and sufficient
cold milk to make thin
enough to spread. Now
heat an iron griddle,
grease it well, and then
spread paste on about
1/2 inch thick. Dip knife
in cold water and smooth
the top. Bake in oven
for 30 mins. or on top
of stove cooking it slowly.
When brown on one side
turn and brown the
other side. Cut in one-
fourths when brown.
