Alabama Rice Johnny Cake

1 cup hot boiled rice; 1 cup
corn meal; 1 egg; 2 tbsp.
fat; Stir fat and corn meal
into hot rice and let
cool, add well beaten egg,
spread 1/2 inch thick on
well greased griddles.
Bake in oven or on top
of stove.

Nutty Bran Muffins.

2 tbsp. shortening; 1/4 cup sugar;
1 egg; 1 cup milk; 1 cup bran;
1 cup flour; 1/4 tsp. salt; 3 tsp.
baking powder; 2 tsp. Walnut
extract. Method: - Cream
shortening and sugar together
well, add beaten egg, mix
and sift dry ingredients,
add to the creamed mixture
alternately with the milk,
then add extract and beat
well. Pour into well greased
muffin tins, bake in a
375 F. for 20 mins.
