Wine Caudle or Panada
Take two wine glasses of water, and two and
a half of wine, and milk buscuit grated fine
put them down & heat, beat well one egg,
take your ingredients from the fire, & when
sufficiently cold add the egg and sugar to
your taste, put it on the fire, let it boil, occa-
sionally stirring it, strain it, and add
grated nutmeg.

Sweet Sauce
Beat the butter & sugar together until it froths
and is quite light coloured, then have ready
a little boiling water, that had been thickened
with a very little flour, stir it into the sugar
and butter, add some white wine & nutmeg, set
it on the fire, and let it boil up once, stirring carefully.
