Mince Pies
Take a fresh Neat's tongue and as many
pounds of rounds of beef, that have been kept
until they are tender, boil them, and after
taking off all the skin and [quistte?], add to
each pound of meat, one pound of brown sugar
half a pound of stoned raisins, half a pound
of currants washed and dried half a pound
of apples, three quarters of a pound of beef suet,
half a nutmeg, & a little salt -- 2 gills
of wine, two gills of brandy and a little cider, if
you please, half an ounce of mace, half an ounce
of cinnamon and a quater of an ounce of cloves,
to six pounds of meat, put it down in a stone
pot, cover close, put a paper wet with brandy over
it, it keeps better without apples, or cider, it
may be used as wanted and if too dry by keeping
add more liquid when used.
