Syrup
Take twelve pounds of Havanna white sugar,
and add thereto three beer quarts of water, and
the white of one egg beaten to a froth, and
stirred in, let it boil up, & when ready to boil over
pour in a little cold water and this do three
times, after which take it from the fire, and
let it stand fifteen minutes, the scum must
then be taken off & the syrup strained, then put
it again into a clean kettle, and boil it slowly
for two hours, and it will then be fit for use
