Boiled Rice
Take a pint of rice well washed; put it into three
quarts of boiling water; let it boil fifteen minutes; &
then pour it into a sieve to drain--

Chicken Pie
Make a good paste, allowing a half pound of butter
to a pound of flour - Cut up the chicken & parboil
them, then select the best pieces, skin them, and
rub them with pepper and salt; put them into the pie
dish, with some yolks of eggs, boiled hard, and some
balls, that have been browned, and some of the
liquer in which they were panboiled; Put in some
pieces of butter that have been rolled in flour, &
add a thick top crust. It requires a quick oven _

Beef tea (Dr Shattuck)

Take a half, or three quarters, of a pound of rump
steak, broil it rather rare, & sprinkle it well with salt &
pepper, as soon as it is done, cut it up quickly, on a hot plate,
& pour over it from the tea kettle, a tea cup of boiling water -
Press the beef, & obtain all the juice, then quickly strain it
through a seive, into a silver porringer, keeping it all the
while, as hot as possible; it is not so good, when warmed over.
