To Make Chicken Poldad
Take offf the skin, cut up the meat fine and chop
up as much sellery as you have meat, add to one
foul of hard boild eggs, mash up the yolks with
1. tea spoonfull of mustard 1/2 do. of Cian pepper
and 1/2 do. black, salt, and vinegar to your tast.
The whights of the eggs to the chopt up with the root
Take not quite a pint of corn meal, scald it with
[boij?] water into a mush then add about a qua. tb lard a little
salt and as much milk as to make a loaf of and nead it up
with wheat meal and a. tea spoon full of seler with as much
risen as will [mais?] it.

Corn Muffens
Warm Milk stired up a little thicken than flam. cakes with
a little salt [water?] and risen add a little
