To cook the Kidneyes
Take pellitory of the wall, woodsorrell &
plantaine of each a handfull, Lettice seeds
and parsley seeds of each ii ounces plarsh
mallows rootes, and the rootes of Asparagus
if you can gett them otherwise take the
rootes of succory of each 4 the rootes of
fillipendula half an ounce break and slice
all these things and still them with a gallon
of new milk of the distilled water take iiii
or 5 spoonfulls every morneinge mixeinge
with them of the syrrupp of Lemmons and
violetts of each halfe a spoonfull.

first wash then scour him well with solt & water till the slime is all

cut of the head that you may tye the skin over where his head
was sett on & it will not be amiss if that you finely draw or stitch

wooden Latts Above the length of him with broad fillettings roast him
leisurely & bast with water & solt till his skin breaks then with butter
being roasted enough let what was put into his bolly & what the drop'd
after the basting with Butter be his sauce with melted butter & gravy
