{(No.41)} To make Orange Water

Take 24 good sivill Oranges, pare them
thin, put the peel asoak in a Quart of the
Best Brandy & 1 quart of sack or mountain
wine, let them steep 24 Hours, then put
to it 1 Quart more of Brandy & two Quarts
more of wine, putt them into a Cold still
and draw it off with a slow fire, in to
Dry Bottles, put into the bottles a Little
Double refine sugar to drop on, when
it is all run off that is good, let it stand
to be Cold & mix it together, make it as
sweet as you like & Bottle it up for use
the still must past round it, & a whet wet Cloth
on the top to keep in the Spirit

{(No.42) }To Make an Almond Pudding

Take the Crumbs of a penny Loaf or two
French rolls, soak it over Night in new
warm milk about 50 Jordan Almonds
Blanch'd & beat with rose water put them
to the Bread, a Little Cream, a spoonful of
Sack, sugar & Nutmeg, salt & grated
Lemmon peel, 3 Eggs, beat it well
together either Bake, it or Boil it
